Scrambled tofu

Who loves weekend brunches?? I DO!!!

Time approximately 30 minutes 

Scrambled tofu with oven roasted cherry tomatoes
Ingredients 4 - 6 people

Scrambled tofu
270 g tofu (natural flavour)
2 tbs cashew- and sesame butter
1 tsp turmeric
0.5 tsp salt
0.5 tsp cayenne pepper
1 tbs liquid smoke
5 tbs water
2 - 3 tbs peanut oil
1/2 scallion
a bunch of fresh coriander

Oven roasted cherry tomatoes
12 - 20 large and ripe cherry tomatoes on the twig
2 tbs olive oil
sea salt
a bunch of fresh thyme

Method of preparing:
Start with the cherry tomatoes. Set the oven to 220 degrees. Rinse the tomatoes, but let them remain on the twig and place them in an oven safe pan. Pour the olive oil on top and sprinkle with a bit of sea salt and fresh thyme. Bake in the oven for roughly 10-15 minutes.

In a bowl, scramble the tofu into pieces, using a fork or similar. Mix together the cashew- and sesame butter, the spices, the water and the liquid smoke in a separate container.

Heat up the oil in a frying pan, then fry the tofu until lightly coloured (roughly 5 minutes). Add the spice paste and mix thoroughly. add more water if necessary. Put on a serving plate. Finely slice the scallion and sprinkle on top together with some fresh coriander. Serve together with the oven roasted tomatoes.
